D.O.P. Pago de Otazu

The geographic and quality recognition "Vino de Pago" (Vino de Pago) arose to protect singular projects, born of a close relationship between vineyard and winery, and which have wines of exceptional quality of exceptional quality.

Pago wines are linked to a single winery that receives this distinction not only because of its peculiar microclimatic qualities or the characteristics of its soils, which differentiate and distinguish it from others in its surroundings, but also for the fact that it uses only its own grapes to create personal wines with a clear constancy of quality over time.

The system of Denominations of Origin (D.O.) is based on establishing different progressive levels of requirements and demands that seek to ensure different degrees of quality. Under this scheme, the wines produced in wineries with D.O.P. Pago are placed at the highest level in terms of quality and guarantee to the consumer (equivalent to the Grand Cru Classé in France).

According to the European Union, and as stated in its regulation 401/2010, the “Vino de Pago” is that which:

Location

When you arrive at Otazu you leave the Señorío, El Cabezón de Etxauri and the fugitive river as a backdrop. Contemplate the vineyard and the winery and from there hear the peaceful silence of the vines, just vines in the January mist.

Bodega Otazu is located in an enviable natural enclave. It is the winery with PDO Pago located in the most northern part of Spain. It is located 8 kilometers from Pamplona and 390 meters above sea level, only 60 kilometers from the Cantabrian Sea and 35 kilometers from the Pyrenees. Bodega Otazu is part of the municipality of Etxauri (Navarra). The vineyard is framed by the Perdón and Sarbil mountain ranges, with the Arga river as the natural boundary of the property.

Bodega Otazu has the most northern D.O.P. Pago vineyard in Spain. Thanks to the exceptional characteristics of the soil and its special microclimate, the wines from this vineyard are very different from the rest of the region.

The Otazu vineyard is the only vineyard in the area, which facilitates the implementation of a phytosanitary control plan that is not aggressive to the ecosystem (due to the low occurrence of phytosanitary problems).

The property has an extension of 319 hectares in a single estate, forming a round preserve. Its rich and abundant soils and its 116 hectares of own vineyards with grapes perfectly adapted to the particular terroir of the Señorío, lay the foundations for the production of wines with great character and personality.

Vineyard

Each vine looks to the press, to the harvested fruit, to the fermented must that aspires to give the best of its essence in the hands of the expert.

Each and every one of the grapes that are introduced into Bodega Otazu come from our own vineyards surrounding the winery. The winery sits on a 116-hectare estate defined by a rich diversity of soils, which are the exclusive source for the production of a unique range of wines with great personality. Due to the decomposition of marl, on the one hand, and alluvial soils, on the other, up to 17 different types have been determined, with a predominance of clays and gravels. The vineyards are planted on trellises, with a double cordon, with a north-south orientation, which allows the grape clusters to achieve excellent exposure and distribution. Planting densities are between 2,700 and 5,200 plants per hectare, with seven types of rootstock.

In order to control ripeness and harvest the grapes at their best moment, the 116 hectares have been divided into 66 vineyards of between one and five hectares each, which are controlled and worked independently. These vineyards are harvested separately, according to their condition and individual needs. All this constitutes an ideal place for the cultivation of the vine, where the selection of the best raw material allows to give each of the wines a personality with similar traits, but with a marked difference between them.

At Bodega Otazu, the selection of our varieties constitutes a certain initiation rite, the first proposal that turns the winery into a peculiar place of worship. Tempranillo, Merlot, Cabernet Sauvignon, Cabernet Franc and Berués for reds; Chardonnay for whites, Tempranillo and Merlot for rosés; Pinot Noir and Chardonnay for sparkling wines, are the varieties on which we bet and which have been strategically planted in each of the different soils and areas of the estate, having as the only final objective the selection and achievement of the greatest potential of each grape. It should be noted that there are 15 clones of red grapes and three of white, seeking that their characteristics complement each other and provide a sublime complexity.

Grape ripening at Bodega Otazu takes place approximately 15 days later than in the rest of Navarra. As a result, we have for our wines a peculiar fruit, whose reflection will be none other than a personality and characteristics of great singularity.

Our cultivation techniques, manual selection, microvinifications in barrels, etc., consolidate the quality of the grapes, the solvency of a fertile natural production that, without pause and without haste, without stopping and with patience, begins a careful process of elaboration.

Another characteristic feature of our vineyards is the presence of a plant cover to control the vigor of the plant and work the soil structure, which naturally reduces up to 45% of grape production, this being the first step in the process of selecting the best raw material.

Variedad de uva tinta de origen francés, procedente de la región de Burdeos, y sin duda la más internacional de las uvas de vinificación, ya que hoy en día se puede encontrar en todos los países productores del mundo.

Se introduce en Navarra a finales de los años 80 y en la actualidad representa más del 16% de la superficie total de la Denominación de Origen Navarra.

La principal característica de esta uva es su alto contenido en polifenoles, materias colorantes y taninos, que permiten la obtención de vinos de color muy intenso y con mucho cuerpo, además de su buena acidez. Es muy apreciada para la elaboración de vinos de guarda, que suelen ser madurados en barrica, y como un complemento indispensable en los coupages (mezcla de vinos de diferentes variedades). Es importante que se coseche en un óptimo estado de madurez ya que en caso contrario puede producir sabores vegetales, amargor y aromas normalmente tipificados como de “pimiento verde”.

Racimo:
Pequeños, alargados y cilindro-cónicos, con un peso medio de 125 gramos/racimo.
Grano pequeño, negro, piel dura y espesa.

Merlot

Merlot

Variedad tinta de origen francés, procedente de la región de Burdeos y especialmente de Saint-Emilion, fiel compañera y complemento del Cabernet.

 

Una uva que se ha exportado bastante a países como Estados Unidos, Chile, Italia, este de Europa, pero que no ha conocido tanta difusión como otras por sus dificultades de cultivo. En Navarra se introduce a partir de mediados de los años 80, para alcanzar en la actualidad una tasa del 14% del viñedo, con 1.700 hectáreas, y ocupar el 4º puesto en importancia en la región.

Se trata de una uva que confiere a los vinos unos aromas afrutados intensos y de gran calidad, con buena acidez y cuerpo, donde los taninos son abundantes pero suaves. Se utiliza tanto para vinos jóvenes como de guarda y sola o acompañada. Junto con Tempranillo y Cabernet compone un coupage moderno y atrevido muy habitual en los vinos navarros. Existen asimismo magníficos ejemplos de vinos de guarda monovarietales elaborados con Merlot.

Sensible a la sobremaduración.

Racimo:
Tamaño mediano, alargado, cónicos, alados y sueltos.
Con un peso medio de 160 gramos/racimo.
Grano pequeño, esférico, color negro fuerte y piel de espesor medio.

Tempranillo

Variedad tinta de origen español, probablemente de La Rioja, que se denomina así porque se cosecha tempranamente.

 

En las últimas décadas se ha convertido en la principal variedad tinta española. Se cultiva en la mayoría de las regiones productoras españolas y en otros países como Portugal, Estados Unidos, Australia, Argentina, etc. Tiene multitud de nombres (o sinonimias): Tinta Fina, Tinta del País, Valdepeñas, Cencibel, Ull de Llebre, Aragonés, Tinta Roriz… Una teoría del prestigioso especialista Luis Hidalgo, la entronca con la uva de la Borgoña francesa Pinot Noir, que podría haber llegado a España, como tantas otras, a través del Camino de Santiago. En Navarra, aunque su presencia es histórica, ha tenido un gran desarrollo en las últimas dos décadas, llegando a convertirse en la variedad tinta principal de la D.O., con 4.000 hectáreas que ocupan más del 34% de la superficie total.

Los vinos elaborados con Tempranillo suelen presentar colores de intensidad media o alta, son poco ácidos pero con buen cuerpo y tienen aromas que recuerdan a las zarzamoras y al regaliz. Se emplean tanto para producir vinos jóvenes, normalmente monovarietales, como vinos de guarda, por su especial aptitud para la crianza y el envejecimiento, donde normalmente se mezcla con otras.

Brotación de media a tardía.
Floración a mediados de junio.
Maduración de 2ª época o semitemprana.
Ciclo medio a largo.

Racimo:
Tamaño mediano – grande, compacidad media, largos, colgantes, de forma cilíndrica cónica alargada y con hombros manifiestos.
El peso medio es de 270 gramos/racimo.
Grano mediano – grande, redondo, color negro azulado intenso algo ceroso y hollejo grueso

Chardonnay

Chardonnay

Variedad de uva blanca de origen borgoñón (Francia) y la más internacional de las uvas blancas. Se cultiva en todos los países productores del mundo por su gran calidad y capacidad de adaptación.

En Navarra, su introducción data de los años 80 y en apenas dos décadas se ha convertido en la variedad blanca dominante en la región y seña de identidad del vino blanco navarro.

Una uva de gran carácter con la que se elaboran vinos con buena acidez, cuerpo y volumen, donde los aromas suelen recordar los cítricos (en ocasiones, las frutas tropicales), el heno y la miel. Por su gran clase, se suele elaborar siempre sola para vinos jóvenes o de guarda: sus vinos son muy aptos al envejecimiento y crianza en barrica.

 

Ciclo vegetativo:
Brotación muy precoz, muy sensible a heladas.
Floración a primeros de junio.
Maduración muy temprana.
Sensible a la sobremaduración.

 

Racimo:
Tamaño pequeño, de forma cilíndrica con una o dos alas laterales.
Son compactos y pedúnculo corto, con un peso de 150 gramos/racimo.

Cabernet-Franc

Cabernet Franc

Variedad de uva tinta de origen francés, procedente de la región del Loira y de Burdeos, donde es la fiel compañera y complemento de la Cabernet Sauvignon y de la Merlot.

 

Se piensa que se estableció en Burdeos en el siglo XVII, cuando el cardenal Richelieu transportó esquejes de la parra desde el Valle del Loira. En 1997, el estudio del ADN mostró que la Cabernet Franc había sido cruzada con la Sauvignon Blanc para generar la Cabernet Sauvignon.

 

Es una de las variedades tintas más plantadas del mundo y su presencia destaca sobre todo en Francia, Italia, España, Hungría, Eslovenia, Bulgaria, Estados Unidos, Chile, Nueva Zelanda, Australia, Sudáfrica, Argentina.

Pinot Noir

Pinot Noir

Variedad de uva tinta de origen borgoñón (Francia). Es una cepa muy extendida a nivel mundial como Italia, Suiza, Nueva Zelanda, Estados Unidos, aunque no se ha internacionalizado tanto como otras por su difícil cultivo y especial sensibilidad a las condiciones climáticas.

 

En Navarra, se autorizó en 2008 y existen pocos viñedos. Por su carácter septentrional, su adaptación es idónea en las zonas más frescas.

Con Pinot Noir se obtienen vinos delicados, normalmente de poca intensidad de color, con buena acidez y cuerpo medio. Se suele elaborar sola tanto para vinos jóvenes como de guarda, aunque es en estos últimos donde se dan los mejores resultados. Importa saber que en la Champaña se utiliza “en blanco”, es decir, para obtener un vino blanco base con el que se producen los famosos espumosos locales.

Floración precoz y envero medio.
Periodo de maduración muy corto.

Racimo:
Racimo pequeño, compacto, cilíndrico, normalmente con un ala muy evidente.
Racimo extremadamente compacto, en torno a 153 gramos por racimo, con un pedúnculo muy corto.
Granos pequeños, de un negro violáceo, de hollejo fino y pulpa suave.

Garnacha

Garnacha

Variedad de uva tinta de origen español, que durante el siglo pasado fue la uva mayoritaria en la Península Ibérica. La garnacha está muy extendida en España, donde se le ha dado varios nombres, como: “Garnacho tinto”, “tinto aragonés”, “alicante”, “navarra”, “garnatxa”… y en otros países se la conoce como “grenache”,”roussillon rouge”, “granaccia”, “uva di Spagne”, “cannonau”.

Parece que el origen de la garnacha se situaría en Alicante, de donde se habría extendido por el resto de España y penetrado en Francia e Italia, llegando a Navarra desde Aragón. En las últimas décadas también se ha exportado otros continentes como Australia, donde vive un buen momento.

En Navarra gozó de una gran implantación histórica (representaba casi el 90% del viñedo a finales de los ’70) que fue perdiendo terreno por la introducción de nuevas variedades. En la actualidad, representa más del 25% de los viñedos navarros con alrededor de 2.600 hectáreas, y ocupa el segundo lugar en cuanto a la superficie plantada. Si bien se cultiva en todas las zonas, tiene mayor presencia en la Baja Montaña y Ribera Baja.

Esta variedad produce vinos con bastante riqueza alcohólica, buena acidez, cuerpo medio y aromáticos. En Navarra se emplea para la elaboración de vinos rosados, donde la técnica del sangrado unida a la frescura y aromas de la uva han dado resultados inmejorables. Pero también se elaboran vinos tintos tanto jóvenes como de guarda de gran calidad.

Berués

Berués

Variedad de uva tinta de origen español, autóctona de la Cuenca de Pamplona. Una cepa reconocida en el siglo XVII por la calidad de sus vinos y que desapareció con la llegada de la filoxera a finales del XIX.

 

La Berués era una variedad tinta de maduración temprana, grano pequeño y piel fina con la que se elaboraban vinos blancos, tintos y espumosos. En algunas referencias bibliográficas consultadas durante la investigación se han encontrado citas en las que se la describe como una variedad con calidad superior al Tempranillo y al Mazuelo, o incluso era requerida por parroquias como diezmo por su particular sabor.

Microclimate, the first step towards uniqueness

The climatic conditions of Otazu are very similar to those of the neighboring lands of Bordeaux. It is a continental climate of Atlantic influence with relevant rainfall in winter and spring, 800 l/m2 per year, and great luminosity and hours of sunshine in summer. This makes it one of the most suitable climates in Europe for the cultivation of vines, as well as for the production of grapes for quality wines.

The thermal differences during the day and night, from 32ºC to 10ºC respectively, contribute to the ripening process of the grapes to a greater fixation and complexity of its aromatic components.

Temperatures are moderate and there are no problems with drought, which favors alcoholic and polyphenolic maturation to evolve at the same time, resulting in more elegant and less heavy wines.

Our climate gives our grapes an excellent acidity that allows us to produce fresh wines with a long aging capacity. Extreme situations that will mark the first step towards the uniqueness of our wines.

The importance of soils in wine!

The soil is the basis of the entire vineyard process. It is the storehouse of water and nutrients. That is why it must be healthy and alive. It is a compendium of physical, chemical, biological and geological properties, all of which can be altered by man.

Let’s look at the physical ones. Its texture, the number and size of its pores is fundamental, something that will allow air to circulate well and retain water with precision. It is a balanced space where sand, silt, clay and their distribution in horizons converge, which help to nourish the vines.

The soil also has its chemical history and tells us about the oxidation or reduction potential and the pH, which influence the quality of the nutrients. In the vineyard everything is connected with everything: soil, air, sun, nature.  Hence the soil can be read like a book and turn pages. Its biological properties tell us about the health of the plant, of the soil itself and tell us about the sustainability of the practices we have employed.

Everything is in the soil. It is the basis of the expression of the terroir. The climate of the area in general, the characteristics of each vintage, the formation of the vines, the altitude of the plantation, the grape variety and the cultural practices of the human being. The soil is the map and the territory of the vineyard.

La presencia de suelos con muy buena permeabilidad y exentos de salinidad, además de la presencia de una cubierta vegetal que reduce, de forma natural, la producción de uva y ayuda a controlar el exceso de vigor en años más húmedos, hacen del terroir de Otazu un sitio excepcional para el cultivo de la vid.
