Pago de Otazu (D.O.P. Pago de Otazu) is a blend of Merlot and Cabernet Sauvignon, made from grapes from our D.O.P. vineyards Pago harvested manually in October, in boxes of 12 kilos to keep the fruit in its optimal state until it is pressed.
The elaboration begins with a cryomaceration at 5ºC for seven days, after which the alcoholic fermentation takes place in small deposits of 40 hectoliter concrete and malolactic fermentation in French oak barrels. The resulting wine is perfected by aging in barrels for 18 months.
